Linguica is a type of sausage, often associated with Portuguese cuisine. It's traditionally made with pork, but this variation uses ground turkey. While it can be enjoyed at various times of the day, it's particularly popular for breakfast and brunch. It's often served with eggs, potatoes, or bread. However, it can also be a versatile ingredient for lunch or dinner, used in dishes like soups, and stews, or as a main course.

 

What You Will Need

Ingredients

  • 1 lb ground turkey
  • 1 tsp minced garlic
  • 1 tsp salt
  • 2 tbsp sweet red wine or port (or dry with 1 tsp sugar)
  • 1 tsp smoked paprika (or regular with ½ tsp liquid smoke)
  • 1 tsp pepper
  • ½ tsp dried oregano
  • ¼ tsp sugar

The Process

  • Combine Ingredients: In a large bowl, combine the ground turkey, minced garlic, salt, red wine, smoked paprika, pepper, oregano, and sugar.
  • Mix Thoroughly: Use your hands to mix all the ingredients together until they are well combined.
  • Chill the Meat Mixture: Cover the bowl and refrigerate the meat mixture for at least 30 minutes, or up to overnight. Chilling the meat helps the flavors meld together.
  • Prepare for Cooking: Once chilled, you can cook the Linguica in various ways:
    • Pan-frying: Shape the meat mixture into patties or sausages. Heat a skillet over medium heat with a bit of oil. Cook the patties or sausages until browned on both sides and cooked through.
    • Grilling: Shape the meat mixture as desired and grill over medium-high heat until cooked through and charred.
    • Baking: Shape the meat mixture into a loaf or patties and bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until cooked through.
