Mexican Turkey Meatball Soup. Albondigas soup is a hearty and flavorful dish that combines tender meatballs with a rich and savory broth. This comforting soup is perfect for a chilly day.

What You Will Need

Ingredients

(Cook some rice first. Make more to use later if you want)

For the Meatballs:

  • Small bunch scallions, chopped (white and green parts separated)
  • 1 lb ground turkey (93/7 lean or 85/15)
  • 1/2 tsp garlic powderv
  • 1/2 cup cooked rice
  • 1 egg, beaten
  • ¼ cup finely chopped scallion, white parts only
  • ¼ cup fresh parsley, chopped
  • 1 tbs dried mint, or 1/4 cup mint fresh, chopped
  • 1 tbs dried oregano leaf, or ¼ cup fresh, chopped
  • 1 tsp cumin, ground
  • ½ tsp chili powder
  • ½ tsp salt
  • ½ tsp pepper

For the Soup:

  • 2 tbsp olive oil
  • 1 or 2 large carrots, chopped
  • 2 or 3 medium potatoes, peeled and chopped
  • Scallions, chopped (green and white parts)
  • 14.5 oz diced tomatoes (1 can) with liquid
  • 6 cups water
  • 1 generous tbs vegetable Better Than Bouillon soup base
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1/8 tsp cayenne pepper
  • 1 tbs lemon juice
  • ¼ cup cilantro, chopped

The Process

Prepare the Meatballs:

  • In a large bowl, combine all meatball ingredients. Mix well.
  • Shape into one tbs portions of about 1-inch meatballs. Depending on how big you make them, you should get about 25 to 30 meatballs.
  • Place meatballs in a cold, oiled frying pan.
  • Put the frying pan with meatballs on medium heat. When they begin to cook, fry for 4 minutes. When browned, gently turn them over and fry for 4 minutes more. Continue cooking until done. Set aside.

Make the Soup:

  • Heat olive oil in a large pot over medium-high heat.
  • Add carrots and potatoes and cook until softened and slightly browned.
  • Add chopped scallions, garlic powder, diced tomatoes, water, Better Than Bouillon, salt, pepper, and cayenne. Bring to a boil, then reduce heat and simmer.
  • Gently add cooked meatballs to the soup.
  • Cover and simmer for 15 minutes or until everything is cooked through.
  • Stir in lemon juice and cilantro before serving.
