In a large bowl combine:
- 1 tbs olive oil
- 1 tbs water
- 1 medium sweet apple such as Gala or Fuji, grated, about 1 cup
- 2 scallions, finely chopped
- 1 tablespoon finely chopped fresh sage, or 2 tsp dried leaf
- 1 tsp finely chopped fresh thyme, or 1/2 tsp dried leaf
- 1 tsp brown sugar
- 1 tsp teaspoon sea salt
- 1/2 teaspoon fennel seed, lightly crushed
- 1/4 teaspoon ground pepper
- 1/4 to 1/3 cup bread crumbs or substitute
The Process
Preparation:
- Gather Ingredients: Make sure you have all the ingredients ready: olive oil, water, apple, scallions, sage, thyme, brown sugar, sea salt, fennel seed, pepper, bread crumbs, and ground turkey.
Mixing the Ingredients:
- Combine Wet Ingredients: In a large bowl, whisk together the olive oil and water.
- Add Dry Ingredients: Add the grated apple, chopped scallions, fresh herbs (or dried), brown sugar, sea salt, fennel seed, and pepper to the wet ingredients. Mix well.
- Incorporate Turkey: Gradually add the ground turkey to the mixture, combining it thoroughly.
Forming and Cooking the Patties:
- Shape the Patties: Using a 1/4 cup measure, scoop out portions of the mixture and form them into patties about 1/2 inch thick.
- Cook the Patties: Heat a skillet or griddle over medium heat. Add a little oil if needed.
- Fry the Patties: Place the patties on the hot surface and cook for about 4 minutes per side, or until they are cooked through.
