What You Will Need

Ingredients

In a large bowl combine:

  • 1 tbs olive oil
  • 1 tbs water
  • 1 medium sweet apple such as Gala or Fuji, grated, about 1 cup
  • 2 scallions, finely chopped
  • 1 tablespoon finely chopped fresh sage, or 2 tsp dried leaf
  • 1 tsp finely chopped fresh thyme, or 1/2 tsp dried leaf
  • 1 tsp brown sugar
  • 1 tsp teaspoon sea salt
  • 1/2 teaspoon fennel seed, lightly crushed
  • 1/4 teaspoon ground pepper
  • 1/4 to 1/3 cup bread crumbs or substitute

The Process

Preparation:

  1. Gather Ingredients: Make sure you have all the ingredients ready: olive oil, water, apple, scallions, sage, thyme, brown sugar, sea salt, fennel seed, pepper, bread crumbs, and ground turkey.

Mixing the Ingredients:

  1. Combine Wet Ingredients: In a large bowl, whisk together the olive oil and water.
  2. Add Dry Ingredients: Add the grated apple, chopped scallions, fresh herbs (or dried), brown sugar, sea salt, fennel seed, and pepper to the wet ingredients. Mix well.
  3. Incorporate Turkey: Gradually add the ground turkey to the mixture, combining it thoroughly.

Forming and Cooking the Patties:

  1. Shape the Patties: Using a 1/4 cup measure, scoop out portions of the mixture and form them into patties about 1/2 inch thick.
  2. Cook the Patties: Heat a skillet or griddle over medium heat. Add a little oil if needed.
  3. Fry the Patties: Place the patties on the hot surface and cook for about 4 minutes per side, or until they are cooked through.

Serving:

  1. Serve: Once cooked, the patties can be served on their own, in sandwiches, or as part of a meal.
