This classic turkey meatloaf recipe is a healthier and leaner alternative to traditional beef meatloaf. It is packed with flavor and perfect for a weeknight dinner. The combination of herbs, spices, and vegetable glaze elevates this dish to new heights.

What You Will Need

Ingredients

For the Glaze:

  • 1 tablespoon vegetable Better Than Bouillon
  • 1 tablespoon hot water

For the Meatloaf:

  • 1/3 cup bread crumbs or substitute
  • 3 tablespoons whole milk
  • 1 large egg
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon basil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon horseradish
  • 1 garlic clove, minced
  • 3 tablespoons finely chopped fresh parsley
  • 1/2 onion, grated, including juice
  • 1/4 cup sweet red bell pepper, finely chopped
  • 1 medium carrot, grated
  • 1.25 pound ground turkey (93/7)

The Process

  • Prepare the Glaze: In a small bowl, combine the Better Than Bouillon and hot water. Microwave for 30 seconds. Set aside.
  • Mix the Meatloaf Ingredients: In a large bowl, combine the bread crumbs and milk. Add the egg, thyme, salt, pepper, red pepper flakes, basil, Dijon mustard, Worcestershire sauce, vegetable oil, horseradish, garlic, parsley, onion, bell pepper, and carrot. Mix well.
  • Form and Bake the Meatloaf: Line a loaf pan with plastic wrap. Add the meat mixture to the pan and form into a loaf. Invert the loaf onto a foil-lined baking sheet, removing the plastic wrap. Brush the top of the meatloaf with the glaze. Bake in a preheated 375°F (190°C) oven for 40-45 minutes, or until an internal temperature of 165-170°F (74-77°C) is reached.
  • Rest and Serve: Transfer the meatloaf to a cutting board and let it rest for 10 minutes before slicing. Serve hot with your favorite side dishes, such as mashed potatoes, roasted vegetables, or a green salad.
