For the Taco Filling:

  • 1 lb ground turkey (93/7 lean)
  • 1 cup pumpkin puree
  • 1 egg, beaten
  • 1 tbs onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and finely chopped
  • 2 tbs corn flour
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 1/4 tsp cinnamon

For Serving:

  • Small corn or flour tortillas

Your favorite taco toppings:

  • Avocado or guacamole
  • Sour cream
  • Salsa
  • Shredded cheese
  • Pickled red onions
  • Fresh cilantro

The Process

1. Prep the Spices: In a small bowl, combine corn flour, salt, cumin, black pepper, oregano, and cinnamon.

2. Combine Ingredients: In a large bowl, mix together ground turkey, pumpkin puree, egg, onion, cilantro, and jalapeno.

3. Add Spices: Add the spice mixture to the turkey mixture and stir until well combined.

4. Cook the Filling:

  • Stovetop Method: Heat a large non-stick skillet over medium-high heat. Add the turkey mixture and cook, breaking it up with a spoon, until browned and cooked through.
  • Oven Method: Preheat oven to 400°F (200°C). Spread the turkey mixture on a baking sheet and bake for 20-25 minutes, or until cooked through.
