For the Taco Filling:
- 1 lb ground turkey (93/7 lean)
- 1 cup pumpkin puree
- 1 egg, beaten
- 1 tbs onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno, seeded and finely chopped
- 2 tbs corn flour
- 1 tsp salt
- 1 tsp ground cumin
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 1/4 tsp cinnamon
For Serving:
- Small corn or flour tortillas
Your favorite taco toppings:
- Avocado or guacamole
- Sour cream
- Salsa
- Shredded cheese
- Pickled red onions
- Fresh cilantro
The Process
1. Prep the Spices: In a small bowl, combine corn flour, salt, cumin, black pepper, oregano, and cinnamon.
2. Combine Ingredients: In a large bowl, mix together ground turkey, pumpkin puree, egg, onion, cilantro, and jalapeno.
3. Add Spices: Add the spice mixture to the turkey mixture and stir until well combined.
4. Cook the Filling:
- Stovetop Method: Heat a large non-stick skillet over medium-high heat. Add the turkey mixture and cook, breaking it up with a spoon, until browned and cooked through.
- Oven Method: Preheat oven to 400°F (200°C). Spread the turkey mixture on a baking sheet and bake for 20-25 minutes, or until cooked through.
