For the Taco Filling:
- 1 lb ground turkey (93/7 lean)
- 1 7.5 oz can of chipotle chiles in adobo sauce, chopped
- 1 small pasilla or ancho chili, seeded and chopped
- 1 small onion, chopped
- 8 oz crushed pineapple
- 2 tbsp vinegarv
- 2 tbsp lime juice
- 2 tsp crushed garlic
- 1 tsp oregano
- 1 tsp sea salt
- 1/2 tsp cumin seed, crushed
For Serving:
- Small corn and/or flour tortillas
- Freshly chopped cilantro
- Onion, thinly slicedv
- Pineapple chunks
- Avocado slices or guacamole
- Salsa
- Lime wedges
The Process
1. Combine Ingredients: In a large bowl, combine the ground turkey, chipotle chiles with adobo sauce, pasilla or ancho chili, onion, pineapple, vinegar, lime juice, garlic, oregano, salt, and cumin.
2. Cook the Filling:
- Stovetop Method: Heat a large skillet over medium-high heat. Add the turkey mixture and cook, breaking it up with a spoon, until browned and cooked through.
- Oven Method: Preheat oven to 400°F (200°C). Spread the turkey mixture on a baking sheet and bake for 20-25 minutes, or until cooked through.
3. Assemble Tacos: Warm corn tortillas and fill with the al pastor turkey mixture. Top with fresh cilantro, onion, pineapple, avocado, salsa, and a squeeze of lime.
