These sausages go great with eggs just the way you like them cooked to order. Add some fresh squeezed orange juice and a hot cup of coffee, and you'll be ready to face the day.
What You Will Need
Ingredients for Infusing the Oil
- 1 tsp dried sage leaf, or 1 tbs fresh chopped
- 1 tsp dried thyme leaf, or 1 tbs fresh chopped
- 2 tbs olive oil
- 1 tbs water
Ingredients for the Turkey
- 2 tbs fresh parsley, finely chopped
- 2 tsp brown sugar or turbinado sugar
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 tbs water to rehydrate dried herbs
- 1 lb ground turkey (93/7. Lean, not nonfat)
- 1/3 cup bread crumbs or quick-cooking rolled oats
The Process
Put herbs, oil, and water in glass container and microwave until boiling, to re-hydrate or cook the herbs and season the oil. Cool. In a large bowl mix parsley, sugar, salt, pepper, and cayenne. Add cooled herbs. Gradually add 1 lbs ground turkey. Stir in bread crumbs and mix thoroughly. Form into ¼ cup size patties and fry until well done. Makes 9.
