What You Will Need

Ingredients

  • 1 tablespoon dried onion flakes
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup milk
  • 1 beaten egg
  • 1/4 cup fresh mint leaves, finely chopped (or 1 tablespoon dried)
  • 1 teaspoon sea salt
  • 1 teaspoon dried oregano leaves
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 to 1/3 cup breadcrumbs or substitute
  • 1 pound ground turkey (93/7 Lean, not non-fat)
  • Olive oil, for frying

The Process

Prepare the Meatball Mixture:

  • In a large bowl, combine the dried onion flakes, parsley, milk, egg, mint, salt, oregano, garlic powder, black pepper, and lemon zest.
  • Gradually add the ground turkey to the wet ingredients, mixing gently until just combined. Be careful not to overmix, as this can result in tough meatballs.
  • Stir in the breadcrumbs or substitute, mixing until evenly distributed.

Form the Meatballs:

  • Using your hands, form the meat mixture into small, golf-ball-sized meatballs.

Cook the Meatballs:

  • Heat a large skillet over medium-high heat. Add enough olive oil to coat the bottom of the pan.
  • Carefully place the meatballs in the hot oil, leaving space between each one.
  • Cook the meatballs for 5-7 minutes per side, or until browned and cooked through.
  • If needed, cook the meatballs in batches to avoid overcrowding the pan.

Serve:

  • Serve the meatballs immediately with your favorite marinara sauce, or store them in an airtight container in the refrigerator for later use.
