- 1 tablespoon dried onion flakes
- 1/4 cup fresh parsley, chopped
- 1/4 cup milk
- 1 beaten egg
- 1/4 cup fresh mint leaves, finely chopped (or 1 tablespoon dried)
- 1 teaspoon sea salt
- 1 teaspoon dried oregano leaves
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 to 1/3 cup breadcrumbs or substitute
- 1 pound ground turkey (93/7 Lean, not non-fat)
- Olive oil, for frying

The Process
Prepare the Meatball Mixture:
- In a large bowl, combine the dried onion flakes, parsley, milk, egg, mint, salt, oregano, garlic powder, black pepper, and lemon zest.
- Gradually add the ground turkey to the wet ingredients, mixing gently until just combined. Be careful not to overmix, as this can result in tough meatballs.
- Stir in the breadcrumbs or substitute, mixing until evenly distributed.
Form the Meatballs:
- Using your hands, form the meat mixture into small, golf-ball-sized meatballs.
Cook the Meatballs:
- Heat a large skillet over medium-high heat. Add enough olive oil to coat the bottom of the pan.
- Carefully place the meatballs in the hot oil, leaving space between each one.
- Cook the meatballs for 5-7 minutes per side, or until browned and cooked through.
- If needed, cook the meatballs in batches to avoid overcrowding the pan.
Serve:
- Serve the meatballs immediately with your favorite marinara sauce, or store them in an airtight container in the refrigerator for later use.
