Indulge in the rich, savory flavors of our classic Turkey Meat Pie. Encased in a buttery, flaky double crust, this hearty pie is filled with tender turkey, earthy mushrooms, sweet onions, aromatic garlic, and a tangy blue cheese crumb topping. Every bite is a symphony of textures and tastes, perfect for a cozy autumn or winter meal.

Ingredients
Pastry for a double crust.
- 3 tbs whole milk
- 1 large egg
- 1 tsp dried onion flakes
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 tsp garlic powder
- 1 1/2 cups chopped mushrooms (4 oz)
- 1 lb ground turkey (93/7)
- 1/3 cup bread crumbs or substitute
- 4 oz turkey bacon, chopped (3 or 4 slices)
- 1/4 cup flat-leaf parsley leaves, chopped
- zest of one small lemon
- 1/2 cup crumbled blue cheese
The Process
1. Mix together milk, egg, and seasons. Add chopped mushrooms and ground turkey and mix well. Gradually add bread crumbs and mix well
2. Prepare parsley and lemon. Mix together and set aside.
3. Roll out 2/3 of the pastry dough to about 14 inches across. Line the bottom and sides of an 8-inch release-form cake pan. Fill with the meat mixture. Be sure there are no holes in the pastry.
4. Layer meat mixture, bacon, blue cheese, then parsley/lemon mixture.
5. Roll 1/3 of the pastry slightly larger than the pan. Use the bottom of the pan to cut a circle. Trim. Inside the pan, fold over the sides of the crust onto the meat and place the remaining pastry scraps on top of the meat. Cap with the circle of dough. Cut a few steam vents.
6. Place a sheet pan on the shelf under the rack where the pie will sit in case it leaks.
7. Bake at 400, uncovered for 40 minutes. Check internal temperature. It should be at least 165 degrees. If not, bake for another 10 minutes. If the crust becomes too brown, cover it with foil and continue baking until it is at a safe international temperature of at least 165 degrees.
8. Cool for 10 minutes.
